It has been over five months since we landed in this malachite country. Originally we had planned to stay for a maximum of two months but thanks to the pandemic restrictions, we are celebrating green Christmas in Ireland!

But here comes a twist – Irish love potatoes! When I say love, it is an understatement! My favourites are…

• French fries (chips) are served with a potato salad

• Mashed potatoes are accompanied by potato chips (crisps)

• Roasted potatoes are garnished with the side of the boiled ones
